Stuffed Baked Sweet Potato

Sweet potatoes are probable something that I could eat every day, and cook many ways. Baking it is one of the easiest ways to cook a sweet potato. I loaded up this tuber with lots of flavors!

Avocados are a fruit that I have been trying to grow to love. A simple homemade guacamole was made using fresh lime juice, fresh garlic, and red chili pepper flakes. The guacamole was paired with a firm roughly diced Roma tomato.

The sweet potato was split down the middle, and then stuffed with the fresh guacamole, Roma tomatoes, and topped with soft goat cheese. Fresh organic collard greens, kale greens, and cabbage was served as a side with a fresh toasted rosemary focaccia roll.

I wonder what else would be a good match for a baked sweet potato? Any suggestions?
