I re-discovered this tasty dish while looking for pasta substitutes. There is brown rice, black rice, green & yellow split peas, red & brown lentils, as well as black eyed peas in it. I cooked this in my rice cooker before using it as filler in my homemade vegetable soup!
Lentils are high in fiber and protein, which helps digestion and lower cholesterol.
Black rice is high in antioxidants, fiber, is considered a superfood.
Split peas are a good source of vitamin B, fiber and potassium.
